All these Cheesy Guac-Stuffed Mushrooms Are a Magical Combo of those Greatest Flavors

Guacamole stuffed mushrooms

Guacamole-Stuffed Mushrooms

Makes: 6 servings

Ready in: 15 minutes

INGREDIENTS

1 lb baby portobello mushrooms

1 tbsp olive oil

3 avocados

1/2 cup grape tomatoes, quartered

1/4 cup green onions

1/4 fresh cilantro, chopped

1-inch jalapeƱo seeded and diced

Juice of 1 lime

1/2 teaspoon cumin

1/4 tsp salt

1/4 tsp pepper

3-4 ounce cotija cheese, crumbled (or blue, if you like )

Pepper and salt to taste

BUFFALO SAUCE

1/2 cup butter, melted

3/4 cup sauce

1/2 tsp seasoned salt

1/2 tsp pepper

DIRECTIONS

1. To create Buffalo sauce, combine melted butter Seasoned salt, and pepper in a bowl. Whisk to blend and store until ready to use.

2. Preheat a barbecue to medium-high warmth or the oven Levels.

3. Toss mushrooms with a sprinkle of salt and olive oil and pepper. Put mushroom bake in oven for 8-10 minutes or stem side up on the grill and cook.

4. While mushrooms cookmix mashed avocados bowl with tomatoes, green onions, cilantro, jalapeno, lime juice, cumin, salt, and pepper. Fold in cotija cheese.

5. If the mushrooms are cooked, remove from oven or grill and Discard. Stuff each mushroom.

6. Mushrooms together with an Buffalo sauce. Enjoy!
